Zesty Roasted Chickpeas

Protein packed and flavoured with a zesty flavour that kids are sure to enjoy.  Try switching up the flavours by combining your own spice mix to keep things interesting!  If you’ve never used dried beans, try making a big bunch once a week to have on hand for the work week. Alternatively you can always use canned beans if rushed (or if you forget to soak your beans overnight!).


  • (2) 14oz can of chickpeas or 1 cup dried chickpeas soaked and cooked according to package
  • 2 tsp camelina oil


Zesty spice mix

  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp dried dill
  • ½ tsp himalayan sea salt
  • 10 grinds of freshly ground black pepper
  • 3 tsp dried parsley


  1. Preheat oven to 400 degrees
  2. Drain and rinse chickpeas, place on a clean dish cloth to remove excess water
  3. In a small bowl combine the spices
  4. In a medium sized bowl add the chickpeas, camelina oil and half of the spice mix
  5. Place on a cookie sheet and cook for about 40-50 minutes or until they are crisp
  6. Rotate the cookie sheet a couple of times to ensure even cooking
  7. Once they are all crisp remove from the oven and add the remaining spice mix and combine
  8. Put in small containers to add to your lunch and enjoy!
