No-Bake Key Lime Pie


I have seen multiple websites with recipes to a raw or no bake key lime pie. Since I had two avocados that needed to be eaten up, limes in the fridge and dates and nuts on hand I thought it was the perfect time to make this healthy dessert.  And I was happy I did. Although the crust didn’t come out like I’d hoped for (I soaked my dates too long and the crust was a bit too soft), the taste was still great. Keeping it a little longer in the freezer helped make the crust hard enough for me to get a piece out without having to spoon it out in a huge mess. I  was very impressed by the filling of this pie, the avocados blended with maple syrup and lime was a perfect combination. I could imagine eating it alone for a super quick treat.

Once you've soaked the dates and walnuts for 1-2 hours, this is a super easy dessert to prepare. Once put together freeze for 2 hours and serve. Super healthy and delicious! Course Dessert Cuisine Raw food Servings Prep Time Cook Time 6 Slices 15minutes 0minutes
  • 1 cup walnuts soaked for 1-2 hours
  • 8 dates soaked for 1-2 hours then pitted
  • 2 tbsp shredded coconut
  • 1 pinch sea salt
  • 2 limes
  • 2-3 tbsp maple syrup
  • 2 tsp arrowroot flour
  • 2 ripe avocados
  1. Soak walnuts and dates for 1-2 hours.
  2. Combine walnuts, dates, salt and coconut in a food processor.
  3. Press mixture into a pie plate.
  4. Combine the avocados, lime juice and rind of 1 lime, maple syrup and flour in a food processor until combined. Taste and adjust sweetness to desired taste.
  5. Pour into pie crust and smooth evenly.
  6. Place in freezer for 2 hours, then cut and serve.
